There’s something magical about fall cooking — the crisp air, cozy sweaters, and the comfort of simmering pots that fill your home with warmth. Trader Joe’s is one of my go-to stops this time of year, because they always surprise me with seasonal favorites that take everyday recipes up a notch.

This Mexican chili combines bold spices, hearty beans, and fresh flavor — and with a few Trader Joe’s staples, it’s transformed into the ultimate fall comfort meal. Perfect for family dinners, game nights, or meal prep, it’s a bowl of fiesta that brings everyone together.

🛒 Ingredients

2 tbsp olive oil

1 medium onion diced

3 cloves garlic, minced

1 red bell pepper, diced

1 lb ground beef (or turkey/chicken)

1 can (15 oz) Trader Joe’s Organic Black Beans, drained and rinsed

1 can (15 oz) Trader Joe’s Pinto Beans, drained and rinsed

1 can (15 oz) Trader Joe’s Red Kidney Beans

1 can (15 oz) Trader Joe’s Fire-Roasted Corn 1 can (28 oz) crushed tomatoes

1 small can (4 oz) diced green chiles

2 tbsp Trader Joe’s Tomato Paste

1–2 Trader Joe’s Chipotle Peppers in Adobo, minced

1 tsp cumin 1 tsp smoked paprika

2 tsp chili powder

½ tsp oregano

Salt + black pepper to taste

½ cup fresh cilantro, chopped

Juice of 1 lime

2-3 diced Jalapeños

👩🏽‍🍳 Directions

In a large pot, heat olive oil over medium heat. Add onion, garlic, and bell pepper. Cook until softened. Add ground beef and cook until browned. Drain if needed. Stir in tomato paste, chipotle pepper, cumin, paprika, chili powder, oregano, salt, and black pepper. Sauté for 2–3 minutes. Add crushed tomatoes, beans, corn, and green chiles. Stir to combine. (Optional) Stir in butternut squash cubes or pumpkin puree for that Trader Joe’s fall flair. 🍂 Simmer for 25–30 minutes. Stir occasionally. Finish with lime juice and fresh cilantro.

🍴 Serving Ideas

Top with avocado, shredded Mexican cheese, and/or sour cream. Pair with Cornbread and/or Trader Joe’s Fall tortilla chips. Garnish with jalapeño slices for spice lovers.
